I've been with the program for a couple of weeks now and I can't figure out how to finish an exercise without catchin wood. Especially on the Long shlong exercise. I've even tried flexing my pc muscle while I did it and it just made me get wood quicker. Does it matter in what order I do the exercises in?

This is harder (no pun intended) for some than for others. It usually gets a little easier with time. If it doesn't there is really only one recourse and that's ejaculating. Split up your PE work into girth (jelq and related) and lenght (stretches). Ejaculate before your stretches and that will help you keep things in check. It's not the most efficient way of doing things but it's better than not doing the stretches at all.
